Turkey Joes

Serves 4

Ingredients:

Barbecue Sauce:

  • 1T olive oil
  • 1/2 med. chopped red onion
  • 2 chopped garlic cloves
  • juice from 1/2 lime
  • 1T splenda or stevia equivalent
  • 1/2 cup tomato paste
  • 1/4 cup balsamic vinegar
  • 1T Worcestershire sauce
  • 1/2 tsp hot pepper sauce
  • 1/2 tsp cumin
  • 1/2 tsp celery seed
  • 1/2 tsp paprika
  • 1/2 tsp oregano

Joes:

  • 1 lb. lean ground turkey breast
  • 1/2 cup chopped green pepper
  • 1/2 medium chopped red onion
  • 4 whole wheat sandwich buns
  • Salt & pepper to taste
  • Non-stick cooking spray

Directions:

  • Prepare barbecue sauce:
    In large skillet, heat olive oil. Over medium heat, sauté onion and garlic for 3-5 minutes or until tender. Add lime juice, splenda or stevia, tomato paste, vinegar, Worcestershire sauce, hot pepper sauce, and spices. Reduce heat. Simmer for 5 minutes, stirring frequently. Remove from heat.
  • Prepare turkey:
    Spray non-stick skillet with cooking spray. Over medium-high heat, brown turkey 8-10 minutes, stirring occasionally. Remove excess liquid. Add pepper and onion, and sauté 3-5 minutes. Stir in prepared barbecue sauce, and season with salt and pepper. Cook another 2-3 minutes, stirring frequently. Remove from heat. Serve in equal portions on whole wheat sandwich buns.
