Lemon Basil Tuna Pocket
Serves 3
Ingredients:
- 2 6oz. cans solid white tuna in spring water, drained
- 1/2 cup celery chopped
- 1/4 cup sliced green onions
- 2T chopped fresh basil
- 2T fat free Italian dressing (Newman's Italian Lemon Lite is very healthy)
- 2T lemon juice
- 1T water
- 1/4 tsp. lemon-pepper seasoning
- 1 clove garlic, minced
- 6 green leaf lettuce leaves
- 6 tomato slices
- 3 6-inch whole-wheat pita breads, cut in half crosswise
Directions:
- Combine first three ingredients in a bowl; stir well. Combine basil and next five ingrediens; stir well. Pour over tuna mixture and stir. Cover and refrigerate at least one hour.
- Just before serving, place one lettuce leaf and one tomato slice in each pita half; spoon tuna mixture into pitas.
