Lemon Basil Tuna Pocket

Serves 3

Ingredients:

  • 2 6oz. cans solid white tuna in spring water, drained
  • 1/2 cup celery chopped
  • 1/4 cup sliced green onions
  • 2T chopped fresh basil
  • 2T fat free Italian dressing (Newman's Italian Lemon Lite is very healthy)
  • 2T lemon juice
  • 1T water
  • 1/4 tsp. lemon-pepper seasoning
  • 1 clove garlic, minced
  • 6 green leaf lettuce leaves
  • 6 tomato slices
  • 3 6-inch whole-wheat pita breads, cut in half crosswise

Directions:

  • Combine first three ingredients in a bowl; stir well.  Combine basil and next five ingrediens; stir well.  Pour over tuna mixture and stir.  Cover and refrigerate at least one hour.
  • Just before serving, place one lettuce leaf and one tomato slice in each pita half; spoon tuna mixture into pitas.
